SENIOR BREWER - ENFIELD
ROLE OVERVIEW
We are recruiting for a Senior Brewer to join our Enfield site!
Reporting into our Lead Brewer, we are looking for someone to ensure our beer is produced to the highest quality at all times and will cover a wide range of tasks from Brewing and cellaring, fermentation and conditioning in line with Quality Control and Production targets.
The Senior Brewer will join our Production team and will act as the main point of contact on the Brewery floor You will supervise the day to day operation of the Brewery team and assist with maintaining high standards of cleanliness throughout the brewery at all times.
You will act as an ambassador for Beavertown and be confident working with minimal supervision on the floor. This role will involve managing projects and coordinating on-going training and support with Production team members.
As one of our Senior Brewers you will ensure we are compliant with all SALSA requirements relating to the brewing process. We are looking for someone who has a flexible approach to work, as you will be required to work on a shift system basis, including weekends.
DUTIES & RESPONSIBILITIES

Assisting the Lead Brewer within particular aspects of Production:
- Support LB in ensuring the brewing and cellaring team can perform all their daily duties.
- Support LB in managing the team by supervising and training Production and Junior Brewers;
- Being a leading member of the Production team;
- Perform all ‘shift leading’ tasks and being responsible for an assigned production area (brewhouse, cellar or filtration) of a fully automated Brewery.
- Being responsible for projects relating to optimising brewhouse/cellar processes, efficiencies and automation.
- Support LB in procedural development and optimisation;
- Keeping systems and records up to date (including but not limited to BOTEC, SAP and full Microsoft Office package excel/sharepoint/teams/powerapps).
- Assisting LB and Production Planning Manager in raw material management.
- Ensuring SOPs are up to date and being followed by all employees;
- Verifying that beer fermentation and conditioning proceeds as expected;
- Verifying that beers are in spec for packaging and assist LB in ensuring all beer hits target specs.
- Ensuring cleaning is performed to schedule;
- Capable of troubleshooting problems.
- Carrying out hygiene work, ensuring the brewery is kept clean.
- Providing cover as a team 24 hours per day, 7 days week including bank holidays (e.g. Christmas); Brewing Ops (Brewhouse) at Beaverworld.
- Keyholder. Often the most senior person on site.
- Knowledge of all relevant Brewing-Packaging-Quality-Ops KPIs and implementation of tasks to ensure teams are aware and on a right track to facilitate them.
- Reporting on Brewing KPIs to LB/HB, precise and on time.
- Organising and attending all relevant meetings, WPM, Daily Brewing, MBM, Planning Meetings etc.
- Good Time Management.
- Ensuring accurate records are kept and written procedures are followed.
- Ensuring all products and processes meet relevant Food Hygiene standards.
- Ensuring raw materials and supplies are made ready and available to facilitate work.
- Ensuring that the quality of product leaving Beavertown Brewery is excellent at all times.
- Increasing your understanding of the art and science of brewing through study and investigation. All Brewers should be working towards their IBD certificate or equivalent.
- Demonstrating the ‘Beavertown Way’ to visitors and clients through knowledge, enthusiasm and hospitality.
When needed, carrying out daily brewhouse duties, including:
- Operate on a fully automated 150hl brewhouse
- Responsible for all aspects of wort production
- Malt preparation
- Brewhouse CIPs
- Keeping systems and records up to date (including but not limited to BOTEC, SAP and full Microsoft Office package excel/sharepoint/teams/powerapps).
- Assisting other brewers during shift overlaps.
- Ensuring brewing teams are carrying out their tasks.
- Performing basic quality checks. Phys-Chem checks, yeast counts & yeast viability.
- Ensuring correct use, storage and stock level management of relevant raw materials (malt, hops, salts etc).
When needed, carrying out daily Cellaring duties, including:
- Operate in a fully automated cellar
- Measuring in tank CO2/DO
- Ensuring beer is in spec for packaging dates.
- Yeasting /hopping off vessels as required.
- Yeast management.
- Carrying out Vessel cleans (CIPs).
- Operating automated Dry-Hopping procedure.
- Separation of green beer using a centrifuge
- Filtration of beer using a sheet filter
- Monitoring fermentation, ensuring Fermentation profiles are adhered to.
- Performing basic quality checks. Phys-Chem checks, yeast counts & yeast viability.
SKILLS & EXPERIENCE REQUIRED FOR THIS ROLE
- We are looking for someone who has a minimum of 3 years’ Brewing experience.
- IBD Diploma in Brewing, Brewing MSc, Food Science or Chemical Engineering degree – desirable.
- A thorough understanding of the Brewing process, equipment and techniques.
- Strong time management skills with the ability to plan ahead and manage multiple tasks.
- Confident supervising a team and questioning the way things are done.
- Ability to quickly solve problems and adapt to change.
- Strong communication, reporting and leadership skills.
- Capable of leading and managing projects.
- Strong record keeping and reporting abilities.
