Born of Beavertown’s obsession with experimentation this revitalisation of our “slow” beer programme will take the organic, living nature of wild beer and brewing to another level, giving The Beavertown Tempus Project a sense of place and terroir. Brewing with local seasonal ingredients, from British hops to local fruits, foraged flowers, herbs to that all important wild yeast. The beers will flow with the seasons, selecting ingredients at their best, some used fresh in beers for now, some to be preserved through the aging process for when the abundance of harvest is over. Through the course of the year the Beavertown Tempus project will bring you 12 beers. 8 seasonal one-off releases and 4 brewed on a regular rotation, available year-round.
These beers are not the recognisable crowd-pleasing styles you have come to expect from Beavertown. The Tempus Project is your journey into a wide, wild palette that will take you on an unexpected, unpredictable path away from beer as you know it.
In the future expect the kind of flavour exploration you would normally find in natural wines, ciders or kombuchas alongside some more historical ale styles. With tart sourness and high acidity to sweet, rich maltyness, from umami savoury to funky and farmyardy. Woody, to toasty, to smoky, to floral to herbal. There is a lot to discover, and a lot of flavour you never expected to find in a beer, but if you give us the time, and your tastebuds, we’ll open your palates and minds to just some of what beer can be.

NAMED AFTER THE TAROT CARD, OUR GOSE STYLE BEER IS FERMENTED USING A NATURAL WINE YEAST AND AGED FOR 6 MONTHS IN A TERRACOTTA AMPHORA. THE HIGH PRIESTESS SITS AT THE THRESHOLD OF THE CONSCIOUS AND SUBCONSCIOUS REALMS, THE SEEN AND THE UNSEEN, AND IS A SYMBOL OF ABUNDANCE, FERTILITY AND THE DIVINE FEMININE. SHE TEACHES YOU THAT THE WORLD IS NOT ALWAYS AS IT SEEMS AND MORE PROFOUND UNSEEN INFLUENCES ARE OFTEN AT PLAY.
Rule of Three, a 5.8% mixed fermentation Saison, aged in barrel for a minimum of 3 months. Each release is a blend of barrels from several previous brews, all fermented using our constantly evolving house culture, and blended in a similar way to a Solera system. Over time the beer takes on a complexity and depth that is far greater than the humble Saison we started with. Thus the name; Rule of Three. Whatever we put out into the world (or into barrel) comes back to us, threefold.
The Chariot, a 5.6% Bretted Pilsner, represents the promise of a new sunrise every morning and the enduring hope for warmer, brighter days on the other side of a long winter. Spending up to 9 months in barrel, The Chariot takes on notes of hay, citrus peel, and leathery Brett, in harmony with delicate bitter hoppyness for a complex pilsner.
